meatloaf ingredients:
1-1/2 lbs low-fat ground beef
1 C old-fashioned oatmeal
1 egg
1/2 C commercial pizza sauce
1/2 C grated cheesetopping ingredients:
1/2 C commercial pizza sauce
grated cheesenon-stick cooking spray
1. By hand, thoroughly mix together the ground beef, oatmeal, egg, and pizza sauce. Divide in thirds.
2. Form a long patty from one-third of the meatloaf mixture and place in baking dish sprayed with non-stick cooking spray. Spread 1/4 C grated cheese in the center.
3. Form a second long patty from another third of the meatloaf mixture and press it firmly over the first to seal the edges. Spread the remaining 1/4 C grated cheese in its center.
4. For a third long patty from the final third of the meatloaf mixture. Top the built-up meatloaf with this patty, pressing down firmly and sealing the edges.
5. Bake for approximately one hour in 350°F oven. Five or ten minutes before it’s done, top with the 1/2 C pizza sauce and sprinkle grated cheese.
Makes 6 servings.Note: you can substitute ground pork, ground chicken, or ground turkey for portions of the ground beef. For instance, I sometimes use 1/2 lb each ground beef, ground pork and ground turkey.
