New Recipe Posted: Gingerbread Men

This is the fifth recipe in the second collection in the recipe subsection of my personal website: Gingerbread Men. Click through for the same recipe as below. (Photo illustrations not yet posted.)

creaming ingredients
1/4 C corn oil margarine
1/2 C granulated sugar
1/2 C light low sodium molasses

dry ingredients
3-1/2 C unbleached flour, sifted
1 tsp baking soda
1/4 tsp cloves
1 tsp cinnamon
2 tsp ginger
1/4 tsp salt
1/4 C water

icing ingredients
1/4 C confectioner’s sugar
water
food coloring

1. Beat margarine and sugar until creamy. Add molasses and mix thoroughly.

2. Sift together all the dry ingredients.

3. Add the sifted dry ingredients to the creamed ingredients, alternating with the water, in three parts.

4. Chill the dough for easier handling.

5. Roll the dough on a cool non-stick surface (I use a Counter-Saver™) to your desired thickness. Cut out gingerbread men either free-form, using a stencil, or with a cookie cutter.

6. Bake on greased cookie sheet in 350°F preheated oven for 8 to 10 minutes, until the cookie springs back after being touched gently.

7. Cool on wire rack.

8. To make icing: mix together confectioner’s sugar and a few drops of water. For color, add a drop or two of food coloring. If different colors are desired, the icing may be divided. Apply to cooled cookies with a tooth pick.

Makes a half-dozen to a dozen cookies, depending on size and thickness.
