A Quick and Easy Corn Chowder
Jacob at Food Is Cheap posts a quick and easy corn chowder recipe based on commercial canned corn.
The major drawback from my perspective is the use of cream-style corn — guaranteed to be bad news for the wheat-intolerant.
Using two cans of regular canned corn would remove the gluten land mine, but thin the chowder liquid. One quick fix that adds no new ingredients would be to spin the liquid with some of the (cooked) potato in a blender.
