Carnival of the Recipes #151 – Special Diet Edition

Welcome to the 151st edition of the Carnival of the Recipes. This week, participants were asked to submit recipes for special diets.

Thanks go to Shawn Lea for getting this Carnival going, and keeping it spinning.

Next week’s edition will be hosted by Slow Cooker Recipes with a theme to sweat over: It’s Too Hot to Cook (Crockpot and slow cooker recipes). Recipes can be submitted through Blog Carnival.

Today’s menu is lengthy, so let’s dive right in!

Diabetic

Diabetic Recipes provides a snack with Diabetic Chocolate Chip Cookies.

Gluten-Free

Triticale, the Wheat-Rye Guy, gives us a recipe that I can get behind: Gluten-Free Chocolate Cake. Not guilt-free — lots of sugar and fat — but no wheat. Chocolate, without fear! You go, Guy!

Dani is responsible for a submission from Living Behind the Curve. Mer magicked up the recipe for a semi-mythical substance: Curves’s No-Pasta Salad. As a bonus, one of the commentators suggests making the salad vegetarian by leaving out the tuna…

Wee Wifey at 2 Fat Leaders comes along with Gluten-Free Recipes even kids love.

Low-Carb

Pancake Recipes starts the day with Low-Carb Pancakes. No wheat flour, so this one could also be filed under “Gluten-Free.”

Deputy Headmistress at The Common Room serves up Curried Chicken Salad, perfect for a summer lunch.

Low-Fat

Thelly at Chicken Recipes worked double-time to provide two low-fat recipes: Low-Fat Chicken with Artichokes and Diabetic, Low-Fat Armenian Chicken. Two blogs, same person, different recipes.

Bill at Famous Recipes cooks up Low-Fat Roasted Cauliflower, which could be cross-filed under “Vegetarian.”

Slow Cooker Recipes provides a low-fat recipe for Mushroom Stroganoff Crockpot that’s meat-free, except for the beef broth.

In my dreams: KeeWee at KeeWee’s Corner passes along a recipe for No Harm Parm, guilt-free chicken Parmasan.

Amanda at Eat… and Be Merry provides some merry news: a low-fat version of fettucini Alfredo.

Non-Alcoholic

For those looking to skip the buzz of booze but not the yum or the fun, Christmas Recipes gifts us with Christmas No-Fat White Sangria Punch.

Vegetarian

World Famous Recipes provides a soup course with Roasted Corn And Green Chile Soup.

Our Carnival hostess, Shawn Lea at Everything and Nothing, offers Mexican Squash Casserole, a recipe to keep handy when your zucchini produces prodigiously.

Mama Squirrel at Dewey’s Treehouse goes ovolactovegetarian for dessert, raising the bar on both Rye Guy and Shawn Lea, with Chocolate Microwave Cake.

Motherhood without a spaghetti recipe? Unthinkable. Here’s Activist Mommy’s recipe for veggie spaghetti sauce. She starts with tomatoes, not a can opener…

Stephanie at Stop the Ride! tries to control an outbreak of cucumbers…

Riannon at In the Headlights serves up Pasta Primavera with Olive Oil and Balsamic Vinegar.

With a bang: Melanie Rimmer serves up a Sunday dinner with roast butternut squash at Bean Sprouts.

So simple, so good: Frozen Banana from Frugal Journey.

Wild Game

Kevin P. Menard at Technogypsy submitted links for three different recipes and said to pick. The winner: a venison marinade cook-off. Why? I have some venison in the freezer…

Everything Else

Kim C., the mother of eight and proprietor of Life in a Shoe, attacks jambalaya. Hey! The kids ate it!

Arvind Devalia provides a pep talk for sprouts.

The Hermit at The Ziggurat of Doom explains how to use the Internet to figure out the nutritional information for home-cooked meals.
