Wheatless Sloppy Joe

Wheatless Sloppy Joe; photo: cehwiedel

1 lb. 15% ground beef
1 small yellow onion, peeled & minced
1 small green bell pepper, seeded & minced
1/4 C. ketchup
1 Tb. Worcestershire sauce
1/2 tsp. Asian chili garlic sauce
8-oz can low salt tomato sauce
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. cayenne
salt

  1. Sauté onion, bell pepper and ground beef over medium heat until beef is browned. Drain & return to pan.
  2. While meat browns, mix ketchup, Worcestershire sauce, chili garlic sauce and tomato sauce in small bowl.
  3. Season the ground beef with onion powder, garlic powder, cayenne and salt. Pour on mixed sauce. Stir to combine. Cook over medium heat until heated through, about five minutes.

Serves 4.

Sloppy Joe is traditionally served over toasted hamburger buns, as pictured. I also serve it as a rice cover to keep it wheatless.

The photographed variation shows the meat topped with undressed packaged cole slaw mix.

Ground turkey may be substituted for the ground beef.
