Pork Chops With Plum Glaze

Pork Chops With Plum Glaze; photo: cehwiedel

1/2 C plum jelly
2 Tb fresh lime juice (1 or 2 limes)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground ginger
1/2 tsp cayenne

4 boneless pork loin chops
salt

  1. Whisk together plum jelly, lime juice, onion powder, garlic powder, ground ginger and cayenne.
  2. Season pork chops with salt. Grill over high heat until brown on all sides and cooked through, about 12-15 minutes depending on thickness.
  3. Brush top with plum glaze and transfer to platter. Pass any remaining glaze at table.

Serves 4-8 depending on portions and what else is served.

This recipe has been tweaked from an original at America's Test Kitchen.

I use a non-stick stove-top grill pan for this recipe. You may need non-stick cooking spray or a small amount of cooking oil if your cooking pan is not non-stick.
