Picadillo de Carne

2 Tb olive oil
10 garlic cloves
1 medium onion, peeled & sliced
6 plum tomatoes, sliced
1 lb lean ground beef
1/2 tsp cayenne
1/2 tsp paprika
32 oz low-sodium beef broth
4 medium potatoes, peeled & cubed

  1. Heat oil in a stock pot or Dutch oven.
  2. Sauté garlic, onion, and tomatoes until onions are tender, about 5 minutes.
  3. Add beef and spices. Stir to distribute. Simmer, covered, for 15 minutes.
  4. Add broth and potatoes, bring to boil, and simmer until potatoes are tender, 10 to 15 minutes.

Serves 6 to 8, depending on what else is served.

Note: This works well served over rice.
