Wheatless Honey Lemon Chicken

main dish ingredients:

8 chicken thighs
rice flour
non-stick cooking spray

Marinade ingredients:

1/3 C honey
1/4 C fresh-squeezed lemon juice
1/2 C strong lemon tea
1 Tb soy sauce

  1. Preheat oven to 400°F.
  2. Coat chicken in rice flour and lay skin-down in baking dish coated in non-stick cooking spray. Bake at 400°F for 30 minutes.
  3. While chicken is baking, steep tea. In small bowl, mix together tea, honey, lemon juice and soy sauce.
  4. Reduce oven to 325°F and turn chicken over. Baste with marinade. Bake for an additional 30 minutes, basting periodically.

Makes 8 servings

 

Note 1: if you are serious about “wheatless,” take care with the soy sauce. Most brands of soy sauce are made with wheat. I use La Choy, which lists no wheat in its ingredients.

Note 2: This is the first use I’ve found for Celestial Seasonings™ tea. I used Lemon Zinger.
