Wheatless Banana Bread

dry ingredients:
1 C oat flour
3/4 C rice flour
2 1/4 tsp baking powder
1/4 tsp salt
1/4 tsp xanthan gum

creamed ingredients:
1/3 C corn oil margarine (stick)
2/3 C granulated sugar

wet ingredients:
2 large grade AA eggs
1 tsp vanilla
2 ripe bananas

All ingredients should be at room temperature.

  1. Pulp the bananas in a blender or food processor. Set aside.
  2. Whisk together dry ingredients into a small bowl.
  3. Cream (or beat with electric mixer) margarine with sugar until smooth.
  4. Add eggs to creamed margarine and beat until smooth. Add vanilla and beat until smooth. Add pulped banana and beat until smooth. Add flour mixture and beat until smooth.
  5. Pour batter into greased loaf pan and bake at 350°F for an hour, or until a toothpick comes out clean. Cool on a wire rack before slicing.

Makes 1 loaf about 8x4 inches.

Serving suggestion: a slice at room temperature spread with a little butter or cream cheese & accompanied by fresh fruit.

Notes:

This recipe is tweaked from an earlier recipe using all-purpose wheat flour.
