Pulled Chicken Sandwich
chicken:
2 Tb brown sugar
1 tsp chili powder
3/4 tsp grd cumin
1/2 tsp cayenne
1/2 tsp salt
1/4 tsp ginger
2 lbs skinless boneless chicken breast
sauce:
2 tsp canola oil
1/2 C chopped onion
2 TB brown sugar
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp dry mustard
1/4 tsp grd allspice
1/8 tsp cayenne
1 C ketchup
2 Tb white vinegar
1 Tb molasses

Combine the first seven ingredients (sugar thru ginger). Rub the spice mixture on chicken. Cook chicken (grill or sauté pan) covered for about 20 min, turning once. Shred with two forks.

Heat oil over medium heat; add chopped onion & cook until tender, stirring occasionally. Stir in next six ingredients (sugar thru cayenne); heat thru. Add remaining ingredients, reduce heat and simmer for ten minutes. Add chicken & heat thru.
Serving suggestion: on toasted sandwich rolls, with tortilla strips, & watermelon slice. Makes 8 sandwiches.
