Banana Bread

dry ingredients:

1 3/4 C sifted unbleached all-purpose flour
2 1/4 tsp baking powder
1/4 tsp salt

creaming ingredients:

1/3 C corn oil margarine (stick) 2/3 C granulated sugar

remaining ingredients:

2 large grade AA eggs 1 tsp vanilla 2 ripe bananas

Non-stick cooking spray

All ingredients should be at room temperature.

  1. Pulp the bananas in a blender or food processor. Set aside.
  2. Sift together dry ingredients into a small bowl.
  3. Cream (or beat with electric mixer) margarine with sugar until smooth.
  4. Add eggs to creamed margarine and beat until smooth. Add vanilla and beat until smooth. Add pulped banana and beat until smooth. Add flour mixture and beat until smooth.
  5. Pour batter into greased loaf pan and bake at 250°F 350°F for an hour, or until a toothpick comes out clean. Cool on a wire rack before slicing.

Makes 1 loaf about 8x4 inches.

Serving suggestion: a slice at room temperature spread with a little butter or cream cheese & accompanied by fresh fruit.
